The Story

Well we didn't see that coming... after cupping this Mexican Selección Puebla it has certainly got our attention. In the past we have found coffee from Mexico to be a little on the earthy side. Puebla however is different. Known for its unique microclimate, which results from the volcanic ash and high altitudes, we are left with a coffee that is complex and interesting. It offers both strong acidic notes, and also very sweet finishes. The body is big and reminds you of chocolate biscuit. Notes of lemon, stewed apple and chocolate biscuit.

Puebla is actually the third largest coffee producer in the country and its coffee is recognised for quality and distinguished flavour, a result of mineral-rich soil and the careful agronomic and processing practices of its smallholder farmers. Producers traditionally follow a washed process regimen passed down from one generation to another. Producers typically cultivate organically to protect their land and maintain healthy soil.

The process begins with the harvest of mature coffee cherries. These are then de-pulped, fermented for a time that can vary depending on the environment and temperature, then washed in artisanal mills. Finally the coffee is dried in the sun, typically on patios around the home of the farmer.
