The Story

It's been... cwor, we think it's been years since we've had an El Salvador in the roastery. And yet, we've cupped so many, but none of them have made the cut. This one however, is a beauty. Sweet, thick & smooth. We love it. We hope you do too. Notes of strawberry, toffee, cream.

Finca El Gobiado Farm is located in the Apaneca Illamatepec Mountain Range, in the town of Concepcion de Ataco, Ahuachapan, at 1,300 meters above sea level. The farm is owned and operated by the Alfaro Family, fourth generation of coffee producers and exporters. The farm has an area of 14 hectares (19 manzanas) and is located in a privileged Mountain Valley type terrain. Its volcanic soil, elevation and climate conditions create an ideal terroir for arabica production.


Cherries are selectively harvested to pick the very ripest for processing, ensuring a high sugar content. The cherries are then fermented for 120 hours in a sealed container at a controlled temperature with some added (secret) ingredients to slow the fermentation process. The cherries are then dried on raised African beds for an average of 22 days.
