    The last to be released from the trio of Jóse's anaerobics, and this one's sending us into the new year with a bang. Start the year as you mean to go on. We've been counting down the days for this one since we tasted it on our trip to Nariño. Wild strawberry sweetness, a full wine gum body and honeycomb to finish. We've only got 20 kilos, get on it while it's hot. 


    Henry's farm is located in Beusaco, at a high altitude of 2100m. This altitude results in the coffee trees becoming agitated, causing increased sugar production and thus a denser bean. This density is what gives Nariño coffee its distinct sweetness and complexity. Cherries are placed in vacuum containers, with low oxygen, meaning a quick and clean fermentation can be achieved. The pulps are then washed off and the beans left to dry on beds.
